St. Martin/St. Maarten

My fiance and I are coming to the island for our honeymoon in the middle of December. We are very excited but a little overwhelmed with where to stay! We enjoy good food and wine and would like to perhaps spend one or two nights "out on the town"-- but we are not looking to go clubbing etc (although I'm not against ending up in one if I enjoy too many refreshments :)). We are looking to enjoy the beaches and explore during the day. I have read that the french side has a lot more culture (I dont want to feel like I'm in Vegas) but we don't want to be so far away from everything that we can't enjoy the other aspects of the island. We are looking for a good happy medium! Has anyone stayed in Nettle Bay? Thoughts? Any and all advice is appreciated.
