Santo Domingo Day Trip from Punta Cana

My husband and I are going to the DR for the first time for a wedding in May. We will be there 5 days, 1 of which is all reserved for wedding activities. We are beach people (from S. California) and will spend most of our time at the resort and/or water activities, but we would also like 1 day in Santo Domingo - primarily to see the Cathedral, Fortoleza Ozama, perhaps one other 'site,' and eat lunch at a good, local place (don't want to overschedule or make it un-fun by trying to do too much). My questions are best transportation to and from PC, cost, amount of time to get there, and are cabs the best way to get around once there in SD? Advice?
