PR itenerary with toddler

Looking for itenerary ideas for a 7 day trip to Puerto Rico at the beginning of February. We will be traveling with my in-laws and our 18 month old son. We are renting a condo in Luquillo, as I heard that the beach there is good for youngsters.

I know we want to visit El Yunque, do the bio-bay tour in Fajardo (will leave my son at the condo with the in-laws that evening) and probably spend a day walking Old San Juan. Any other suggestions for activities that would work with a toddler? How about restaurants in the area? We also want to do at least one "date" night at a nicer restuarant, ideas? Thanks!!
