Nevis or St. Lucia

I am planning a trip with my husband for the big 4-0 after Thanksgiving weekend. Leaving all the kids at home.
Just got back from Ritz St Thomas, St. John and BVI at the end of November. LOVED IT and can't wait to go back.
Want to try a new island. Looking at St. Lucia Jalousie Plantation or Nevis Four Seasons. Trying to find someone that has been to both islands to understand pros and cons of each.
We have been to Abaco, Bermuda, Caymans, Mexico both sides and Hawaii. I hear snorkling is so so compared to other places we have been.

Looking for the following:
4++ or 5 star resort with awesome amenities, service, etc.
like to run in am so want paths
pool and beach service -want to spend lots of time relaxing
good spa
tennis
water sports (kayak, snorkle, scuba, fishing, etc.)
guided hike
guided bike
travel around island potentially to see culture
dining options other than resort (just in case)
tv and phone to stay in contact with kids (how is cell service down there)

Please let me know your thoughts about both islands and if you have stayed at both properties and can outline pros/ cons. I hear Jalousie is changing its name to Tides Sugar Beach later in the year.

Finally what is the real story connecting through Charlotte internationally from Caribbean I have heard three different things. From St. Kits or St. Lucia do you go through customs, get luggage then have to recheck luggage and go through security again. Is all that done in the same location or do you go up and down different levels with lots of lines. We have another flight to catch from Charlotte to original desination and only a 1 hour 40 minute layover potentially in Charlotte. Is that enough time?
