Ok, after many hours of research I have narrowed it down to three islands/areas. St Lucia, St. Johns, and BVI. They all have hiking, good food, minor snorkeling (don't know if I would even like it anyways), and quiet for the most part.
So now I am reaching out to you all to get your advice, since I cannot seem to find it on my own after many days of researching. I want a resort that serves breakfast onsite, has free access to water sports equipment and at least a great restaurant nearby. We will be eating out every meal, because my wife does not want to cook. BUT MOST OF ALL, I am looking for a resort that is totally quiet, I want to fall asleep and wake up to the ocean. I know that immediately puts all the Soufriere hotels out of the mix. I find the noise, from one persons post, of the sounds of the wildlife grating. I am a very light sleeper and that would keep me up all night.
My ideal would be Mango Bay on Virgin Gorda, but that does not have a restaurant on site for breakfast. Also Peter Island Resort, and Rendezvous are high on the list, but both of them are pretty pricey atm.
Just a little background information we are both 30, and really enjoy fine foods.This is going to be a honeymoon for my wife and I. We have been married for about 5 years and have never taken one. Also, our budget for the hotel is flexible but i would like to keep it under 3k for 7 days if possible. If the resort is perfect, I would be willing to go higher.
Please any help would be greatly appreciated. I am looking to book immediately if you all have a really good idea.

If you like Mango Bay check out Nail Bay. It's just up the road from Mahoe bay where Mango Bay is. We usually stay at a villa closer to the Nail Bay beach, but we head up to nail bay resort for dinner and it looks like a great place to stay as well.

It sounds like the BVI's are what you are looking for. Lots of places to spend some time in a nice beach chair.
I understand what your are wife is saying about not wanting to cook on what really is her honeymoon. That, and a bottle of bubbly one night!
All in all, I think the suggestion of Nail Bay would be a good one!
A couple other great resorts to consider that would meet your criteria would be Scrub Island and Rosewood Little Dix Bay in BVI.
