We will be at Atlantis mid-May for my Mom's 70th birthday. We would like to have as nice a dinner as the younger ones can tolerate (one 7 year old, one 10 year old and then they jump to 16,18 then adults 40-75).
We would like to have a good time - maybe take a Hummer Limo to dinner for starters..... But it can't be too stuffy and we don't want it to be too casual that it doesn't feel special.
I'd like any suggestions please.

I'd suggest checking with the consierge at the Atlantis and doing the dinner right there. There are several very good restaurants right on site that could handle a large group.
Other than that, Cafe Matisse might be fun, or more casual Bahamian fare, you might try Johnny Canoe's on Cable Beach. You can sit outside and enjoy the weather and music and have some great Conch fritters and grouper. They have a good menu there and it's very laid back fun.
Another good suggestion would be the Poop Deck, and I think they even have a party room. Really good seafood there, and it's right over the PI bridge.

I would suggest either Portofinos at the British Colonial Hilton, or for a more upbeat bahamian experience, try Conch Fritters in Downtown Nassau. Conch Fritters has an upstairs that would fit the bill.
I'd second the Poop Deck.... it's close to the Atlantis... not stuffy at all... more of a fun atmosphere... and the food is very good.
