My boyfriend and I are planning on staying in Puerto Rico, Martinique or St. Kitts for the full month in January 2013. Here are some things that we are trying to find.
1. We are trying to find a place that is not too touristy because we live in NYC and my boyfriend wants to have a relaxing month away from a touristy city. But I want some chill local restaurants and bars. .
2. We also want a villa, apt or house that is on the beach that has some decent snorkeling within walking distance
3. We also enjoy other outdoor activities such as fishing, kayaking, diving, and fishing.
Are there any towns, cities, villages that I should look into? Or do you think that we should look into other countries.
Any tips would be so helpful! I have been looking at HomeAway and Airbnb for places.

you might look at/near Akumal, mex. it's approx 75 mins south of cancun on good hwy. akumalbeach & jade beach have snorkeling from shore plus yal-ku lagoon. the town of akumal has a small grocery, 1/2 doz rest/bars. kayaking, diving, fishing all close by as well as numerous other activities.
for more remote than that - look at houses on soliman or tankah bay beaches (1/2 way between akumal & tulum) we stayed in casa cavu on tankah. had snorkeling off beach & in cenote across the street, 2 small restaurants.
bigger town would be playa del carmen.
maybe spend 2 weeks in 2 different places.
you will need to rent a car for any of above.

as you're going for a month you might want to try scuba. you can take the written portion of the test online from home, then do the in the water part while on your trip.

Sounds like you might to try Roatan Honduras, or Ambregris Cay in Belize. Both are famous for the snorkeling and scuba, both have sleepy little towns with local restaurants.
I'm assuming by what you're looking for you're on a tighter budget? Another reason why those 2 or The Mexico suggestions would work for you. Caribbean is peak season, and you'll pay much more for the month of January.
Virginia is spot on. I rented from Locogringo, they were great to deal with.
I divided my vacation between fun in Playa del Carmen (funky little oceanfront town, lots of bars and restaurants, shops), You can take the ferry from Playa to Cozumel for the day as well. I took a cab to Akumal (20 minutes) where I had booked a beachfront condo. Lots of good snorkling right outside the condo (turtles!) and a few bars/restaurants on the beach as well as a small store nearby.
Have fun! Your money will go a lot further in Mexico than the Caribbean in January, though with the Caribbean you are guaranteed hot weather.
Another vote for Akumal...plenty of villa & condo choices. Great snorkeling, lazy little village/town, good food, and plenty of other activities available.
