I am going to be 50 in March 2015!! Help us decide where to go...

Planning a trip for 6 adults (ages-23-50) who still want to have fun in sun! Thinking Jamica, Cozumel, Cabo or Dominica Republic.
Criteria is (in order of importance)
1. Adults only (don't want evil eye when I have had too many cocktails around the kids)
2. No reservations (don't want to watch the clock-just when you are having fun)
3. No dress code (whats worse when you HAVE to dress up...wrecks the jag)
4. Swim up bar (just because)
5. Beautiful beach
6. Like to explore the culture (like on Isla Majerus-able to leave the compound)
7. All inclusive so we dont have to carry money all the time, however reasonable enough that can venture to little huts/watering holes to be among the locals)
8. Water options like: snorkeling, parasailing, zip lining)
9. Willing to spend up to $1600.00 per person for a week beginning of March
We have been to All Privelege Aluxes in Isla Majerus and loved it except for no entertainment at night. We have also been in Punta Cana (cant remember resort name however it was 4 resorts in the compound and we could go to 3 of them) but did not like reservations/dress code and no one spoke English...pool closed at 6pm.
Safety is clearly always an issue as well.
I know I have a long laundry list. I thank you in advance for any/all help.
An almost 50 year old from Wisconsin who still likes to try to whoop it up once in a while!!
