honeymoon help

My fiance and I are planning our honeymoon for 1 week mid-may. After much research, we are still at a loss as to where to go for our honeymoon. We have been to Roatan in 2009, which we loved. What we liked about Roatan is that is wasn't overly touristy, and the bars, restaurants and nightlife were all run by the locals. However, we wanted to try something different. We are looking for a small rental house (the all inclusive thing just isn't for us; we used vrbo.com for Roatan). Our "musts" are water activities (mainly snorkeling so good coral reefs would be amazing-we won't be diving), some good nightlife (bars with local flair and music-not into clubs), and also some activities/sites to entertain us when we're zapped from lounging on the beach all day. Our budget is limited. I'm not sure how much we're going to spend yet, because family may contribute as a wedding gift. We are pretty low-key people. We don't care for fancy resorts. We just want a laid-back vacation in a similar atmosphere.
