Help with Nevis restaurants and activities

Headed to Nevis at the end of November staying at FS taking FS boat from st kitts. Leaving kids at home. Now I need to plan the rest. It's getting cold up here so I am looking forward to planning. People on this site were right on with Turks And Caicos help last spring in regard to hotel, activities and restaurants so thought I would reach out again.

Was wondering if you could help me with the following in Nevis.
Restaurants:
If you only wanted to leave FS two nights for dinner, where would you go???
What are the two must eat at dinner spots before you leave? Cost open.

Favorite lunch spot- not fancy! Would that be sunshines????

Activities:
I know Nevis is not known for snorkel. Are we better off going with FS charter or scuba safaris? Is Shitten Bay the best spot????? Does time of day matter that time of year? How long is the boat ride from FS to Shitten Bay? How are waters? Rough, calm, etc. What fish will you see???
What about scuba is it worth going out???? Have already dove in caymans, cancun and USVI.

I read materials from FS on hikes but am confused bc there are so many. Is there a particular guide to ask for and or hike that is a must. I don't want to spend an entire day on a hike but maybe a morning????

Finally is the beach horse back riding cool or kayak tour fun.

We are only at FS five nights so want to relax for sure but like an activity for each day.
