Help finding resort

My husband and I will be celebrating our 15th anniversary next summer and would like to go to a resort in the Caribbean for a week. We live in South Texas and he does not want to go to Mexico this year. He would prefer an all-inclusive simply because he hates paying bills on vacation. I would prefer either adults only or not a super popular place for families. If I have left my children with grandparents, I really do not want to deal with anyone else's. I would love to go somewhere that didn't have a lot of beach merchants but I know that may not be an option.

Our budget is around $5000 for accommodations. We have done several cruises to the Caribbean but this will be our first time to actually stay at a resort there.

Any one have any great suggestions? Thank you!

you might like turks & caicos. no beach merchants. look at http://www.verandatci.com/ the island has really good restaurants though... so if hubby would consider. many resorts have onsite dining.

or on antigua http://www.sandals.com/main/antigua/an-home.cfm

when you cruised, were there any islands you particularly liked the look of?

Most of the adult only AI hotels are in Mexico, Jamaica and a few in the DR. If you don't want to go to Mexico, look at Couples, Sunset at the Palms and the Jewel resorts in Jamaica.

Here's a list of AI resorts in the Carribean. They denote adult/couple only and family.

We stayed at the Iberostar Grand Rose Hall in Montego Bay last year. It's adults only and the resort doesn't allow vendors on the beach. It's a great resort with very good food and Montego Bay is fairly close to some fun off-property activities.

My favorite island in the Caribbean is Palm Island in the Grenadines. We have been there several times and it has been the best discovery. In the summer it will be more affordable. It's not exactly "luxury" but it has such an allure. It's a AI private island and the cuisine is very good. Very relaxing, comfortable ambiance. The staff warmly welcomes you at the dock with a rum punch. It is a ways to travel, but so worth it!
