Grand Cayman, Aruba or St. Maarten?

We have never been to the Caribbean and are looking for and island to travel to this winter to celebrate a 30th birthday and anniversary. It would be two couples. Our must list is good food, nice water, and a fun pool scene. A little nightlife wouldn't hurt either. Not really clubs but some bars open past 10. Our main goal for this vacation is to sit by the pool/ocean all day and then go out for a nice dinner and maybe hit a bar or two. Money isn't too much of a concern. We have narrowed it down to Grand Cayman, Aruba or St. Maarten. I would appreciate any help and suggestions. Maybe if someone could give me a feel for these islands and what they have to offer. It seems each island has some of what we are looking for but looking online I can't tell if any one has it all. Thanks so much for any help. I've been looking at so much for so long I feel like my head is spinning and I can't make any decisions anymore!
