Good beach snorkeling, don't care about luxury for group of couples

I'm currently looking into putting together a 4 night trip to some Caribbean island or possibly Cozumel. There could be up to 4 couples each 25-35. We are all pretty adventurous and don't care too much about luxury accommodations as we spend little to no time at the hotel.

I went to Negril, Jamaica a couple years ago and it had some reasonably good snorkeling about 100yards right off the beach in about 20 ft of water. It wasn't the great barrier reef, but it was a lot more than just a coral head and a couple tangs.

What I'm looking for in a resort in order of importance:
Beach snorkeling the same or better than what I had at Negril
I'm sure we would take a tour at some point, but it was really nice to have something right off the beach.
Something with at least a little night-life.
Access to good diving and regular reef snorkeling
Exotic scenery and local is more important that luxury, if that makes sense.
Keeping the price at a reasonable cost(under $200/night)
off the beaten path is always fun
2.5 - 3* accommodations are sufficient

What I don't want:
high end luxury
crazy tourist trap
a place where there is nothing to do but sit on the beach.

From various posts all over the internet I've somewhat looked int the following and the packages from Expedia are all within $200 of each other:
The Bahamas(have no idea which areas suit my criteria though)
El Cozumeleno on Cozumel
Grand Cayman
Turks and Caicso(I've seen conflicting reports on beach snorkeling here)
St. Lucia
Caneel Bay US Virgin Islands

How would those locations rate against each other based on my criteria? Any help on these would be greatly appreciated.
