First time visitor to St. Kitts & Nevis not a fan of "all inclusive"

My husband and I are going to be going on our first "real" vacation in November (2001). We have chosen St. Kitts & Nevis as our destination because we have heard that it is one of the most unspoiled destinations of the Carribean. We are not fans of all inclusive packages, so I am doing research and building our vacation myself. We are beach bum types are not really looking for luxury so to speak, but rather a quiet, beautiful, get away from it all type vacation.

We will probably only spend a few days in St. Kitts and most of our time in Nevis. With such limited time in St. Kitts are there any "must see" things to do? Which island has the best beaches (as in clean, not crowded, good for swimming/amature surf play). What about retaurants? Any inexpensive/moderately priced to recommend?

All advice is greatly apprecaited!
