First time to Caribbean, where to go?

My girlfriend and I are planning a trip to somewhere in the Caribbean for sometime in the first two weeks of January (approx 7 day trip). I have no idea where we should go though. There are so many options! Hopefully you guys can help us choose. Here are some of the criteria we are looking for:

Budget: around $5000 for the two of us including airfare from Calgary, Alberta Canada

Type of resort: All inclusive. We have never been to an all inclusive and want to try it. We do however want a luxury all inclusive (I hope our budget allows this). I want a place where we can eat excellent food (not a buffet like the one in National Lampoon's Vegas Vacation). I also want to be able to drink premium liquor, not just no-name rum and beer as part of the inclusive

Wouldnt mind a little bit of history, but scenery is more important. Relaxation is number one, but a small portion of adventure is ok.....maybe a one day historical tour.

not really looking to have to rent a car

I want to see the most beautiful turquoise water I have ever seen, and powdery white sand beaches. I have been to Playa del Carmen and that sand/water was beautiful, but I have expectations for the Caribbean water/sand to be even better.

I wouldnt mind doing a little bit of snorkelling, not something I would do every day.

Shopping/Nightlife/Casino: a bit of shopping would be nice......dont care too much about clubs.....a casino is cool, but not a necessity.

proximity to beach.....I want to be very close to the beach.....actually on the beach.

food.....As I mentioned earlier, we want to eat really well. My girlfriend is a vegetarian though....no fish....but eggs and cheese are ok. She doesnt want to have to eat pasta every night. This is an important one. We are both culinary adventurers (I eat anything) but there just has to be good meatless options for her.

temperature....hot hot hot! I love the heat. Since I am escaping a brutal Canadian winter, I am looking for some smokin hot temps.


Hopefully that is enough info for some of you experienced travellers to help me out. right now I am leaning towards Barbados, St Lucia, ABC islands, etc, etc but I am really open to anything. The only thing I want to avoid is Mexico.
