First Time to Caribbean- Island Advice

Hi everyone! My boyfriend and I are planning a trip to the Caribbean in the middle of April and I'm hoping to get some advice on where to go. We are flying from Chicago and will be staying about a week. I'd like to keep the budget around $3000.
As far as what we are looking for:
I'd like to be at a nice, pretty beach and things like snorkeling would be fun, but not a deal breaker if the snorkeling isn't the best.
Some night life is nice. By that I don't mean I'm looking for clubs or anything, just a few bars/entertainment in the area so that we aren't sitting in our hotel room every night.
I would like to be able to explore a little bit during the day as well, so am looking for something that would be safe to do this and also not necessarily need to rent a car for.
I've been doing some research and it seems that all inclusive is the way to go. I'm not totally opposed to non AI though. I'm looking for something that is clean and well kept and, if AI, does not have a ton of add on expenses.
We have both been to Mexico and would like to go somewhere new. I know there are a lot of AI's in Jamaica and DR, but I'm not 100% sold on either of those.
Some ideas that I've had are Antigua, Virgin Islands (St Croix or St John maybe), St Martin/St Maarten (am not sure which side, people seem to prefer St Martin), or the Bahamas. I'd love to go the Cayman Islands but I think that may be out of the budget.
Would love to hear any advice/ideas and am really just looking for some of your opinions as a jumping off point.
