We are looking at traveling from the Denver area to Grand Cayman next spring. It looks like Continental has the best schedule to get there but they are quite expensive ($900+). I can wait for probably 7 or 8 months before booking tickets but I'm wondering, pricewise, when is a good time to book? In other words, how low can I expect the price to drop over the next 7 months? $700?,$500?, $400?(Hey, I can dream!) or is $900 as good as it's going to get? (ouch!)

You will probably do better if you book a Denver to Miami/Ft. Lauderdale flight then a Miami/Ft. Lauderdale to GCM flight seperately.
I live in South Florida and we fly frequently to Denver for $150 - 200. Frontier & Spirit both have direct flights into Ft. Lauderdale.
I just checked prices for Miami and Ft Lauderdale to GCM for August and prices are running around $450. So for $600, you're there.
Most of the major travel websites have a service that will monitor airfares for you and will email you when the fare drops below a specified price. I would sign up on a few of the sites and watch for awhile. This will help you learn what the fares are and you'll be able to tell if you're getting a good deal.
FYI - I've found when flying in/out of South Florida, it's often cheaper to go to Ft. Lauderdale.
We went last May from Denver. Our original flight was Delta for about $700, if I recall correctly, and we purchased it in approximately February. At the time, American was slightly cheaper, but we liked Delta's schedule better. Later, however, we found out that Delta had changed their schedule and was no longer flying on our return date (they rebooked us for the day before, but hadn't bothered to tell us). So we cancelled that flight and rebooked on American, which by then was cheaper at about $580.
