I've only ever been to Havana in October, but it's only 2 hours down the coast so weather conditions are similar.
Weather wise, you're past the peak of the hurricane season and though it is still officially the "rainy season", it is mostly a quick shower in late afternoon and nothing to worry about, if in fact it does rain. Temps will still be nice and warm and overall, it's a pleasant time of year to visit.
In Varadero I've only been to the Tainos resort so I can't help you directly on Sol Palmeras. A good source of info is the discussion board and reviews at this website.

Cuba is a fascinating country and unlike most other Caribbean destinations. The people are VERY friendly and for me that's always one of the highlights of my trips.
In Varadero you should spend a day wandering around the outdoor market in town and also spend some time for a quiet stroll around Parque Retiro Josone. The well-kept municipal park, between Calles 54 and 59, is centered on an old mansion furnished with colonial-era antiques. A wealthy sugar mill owner, José Onelia and his wife built the park and mansion in the 1930's. The well landscaped park includes a lake with flamingos, geese and swans and there are rowboats for rent. There are several outdoor bars and three restaurants including this quiet over-water patio. A nice place to sit and sip a cold cerveza.
Also if it fits your budget, you really should try to get one of the excursions to Havana for a day. Havana is my favorite destination in Cuba and I've been there many times. Habana Vieja (Old Havana) is simply wonderful to wander around.
