It is still Hurricane season in the Caribbean in October. Later in October and into November would be best.
I just got back from Varadero and Cayo Coco about 2 weeks ago. There are some amazing resorts. I think if you are looking for romantic either the Melia Cayo Coco or the Melia Cayo Guillermo would be best. they are both small and beautiful resorts. Melia Cayo Coco has a better beach. They also have rooms located on a lagoon on stilts which is really neat.
In Varadero, my favorite resort was the Tryp Penninsula. They do have children, but they put them all around the family pool, so you would be in the adults area. Kids are aloud in the pool with the swimup bar, but most would perfer thier own, because it has a water slid.
Beaches Varadero is another great resort.
We did not get to see Paradisus but I guess it is the most amazing resort in Cuba.
