CUBA- Hotel/Club Tryp Cayo Coco

We have just booked a Jan. holiday for 13 people to the above all inclusive resort. Said to be a 4- 4 1/2 star resort with many restaurants and bars to choose from.
Would like to have any information on this resort or this area of Cuba.
We are a little concerned about quality of food, as i've read many things on this board about "acceptable" food throughout the resort chains in Cuba. How is the beach? I have read that we may not have really hot temperatures this time of yr! How is service, etc...
Any info would be appreciated...any recommends for day trips?
WE are a group of 13 (mostly couples) in our mid 20's looking for relaxation, good food and drinks, and a fun time.
All comments welcome, re: Tourism (no politics please).
