Best way to travel once in Cuba

My husband and I are going to Cuba in December for 2 weeks. We've chosen to fly from London, via Paris, with Air France as I've read Cubana has the worst safety record of any airline in the world and I'm really scared of flying. We are planning to stay in Havana for a couple of days and then travel towards the south of the island, where I presume will be warmer.

I need your help to decide on the best to travel once we get there. As I said, I'm terrified of flying and would never get on a very small plane but would love to see as much as I can while on the island.
