Beachfront Self-catering and..."budget"...anyone?

I think I have searched the Net to find all there is to see on Antigua that is on an expanse of (swimming / snorkeling) beach, but if anyone has anything to add I would love some input!

We are looking for 2 separate places, for a week each, the week of Christmas and New Year's, and we are on a budget ($250 a night for a 2 bed 2 bath?)! Prefer to not be around crowds and a lot of tourists but would like to have a few things we can walk to. We much prefer NOT to eat out every meal and have enjoyed self-catering apartments / duplexes or low-rise condo's.

One place we are looking at is Dutchman's Bay Cottages, but there is talk of it being windy in December and we would like to enjoy relaxing on the porch reading outside etc. Pelican Isle also looks good, but not all the Villa's appear to be beach front.?
Any advice anyone or other options?

As it is a popular time of year, and prices go way up I know we need to make reservations quickly. Just want to make sure there are places that are a good match before making flights.
