Antigua -- off the beaten path advice

We are traveling for the first time to Antigua in April with our 2 daughters(9&12). We are sttaying in Jolly Harbour, not in an all-inclusive, so would like advice on adventurous activities around the island. Some things on our list: snorkeling(offshore), fishing, horseback riding. Any specific locales or outfitters recommended? Also is Barbuda worth a day trip? Any special restaurants(we like local culture) or places for sunsets/coctails?
Also, do we need to rent a car or will bussing it be fine?
