Anniversary Trip- Need Input

Hi! I am looking for thoughts on the best place for 5-6 night stay beach vacation for our 5 year anniversary. We plan on traveling late May - June timeframe. We love the beach and the amenities of larger resorts but we also crave being able to walk off the resort and explore. For example our favorite beach vacation so far is Cabo San Lucas where we stayed at the Barcelo (now Hyatt I think) and were able to walk/ride bikes around the small town. Similarly, we loved our stay in Provo T&C for this same reason, but obviously superior beaches! Ideally, we are looking to vacation in places where Southwest flies but not required. We've done Riveria Maya several times and Playa. Love it and great value but looking for a new spot. We have not visited Cancun. Total vacation budget is around $3000-3500 excluding air.

Southwest flies: Cancun, Riveria Maya, Cabo, puerto Vallerta, Puerto Rico, Punta Cana, Jamaica, Belize, Aruba, Nassau. Think I covered me all!

Btw- we are mid-thirties and fairly active on land and water. Thank you!
