alternatives to all inclusive NEEDED kids activities

We're a family of 4...a 14yo boy and 10yo daughter. We've been renting condos for years in Akumal, Mexico (usually Easter / Passover school holiday) and we love it....low key / laid back.

But we don't relax enough - Why? Because we need more stuff for our kids to do ie like the kids activities offered at an all inclusive. We stayed at an all inclusive once and would prefer to find alternatives -- hotel rooms are too small (financially would like to avoid 2 rooms or big suite) and its not really our style....we like driving around / picking where we want to eat or shopping and cooking. Frankly, if we found a day camp-like program (sports, art, drama) we'd return to a place like Akumal in a heartbeat.

I can't believe our situation is unique. Our only requirements are kid activities (more so for 10yo than older one) and warm weather / beach / probably caribbean (in Feb or April). Thoughts? Thanks.
