your best choice is the maya riviera section of mexico. south of (not including) cancun to tulum.
somewhere near playa del carman would be good. or for more quiet near akumal.

Mexico, Jamaica and the Dominican Republic have the most variety of AI resorts.
I agree with Virginia. Look at the Iberostars, RIU's, Barcelos and Occidential in Mexico.
