advice needed: Turks & Caicos resort choice

Hi everyone - my boyfriend and I (54 and 46) are looking into a trip to the Turks & Caicos in early June for his birthday. I've been doing my research, but thought I'd tap these wonderful forums for advice. We are looking for elegance and luxury and a beach and pool and hotel services. We love to eat good food and sit on the beach and relax, and a good spa & gym or access to a decent running route would be pluses. We like peace and quiet, and are definitely not looking for a family-oriented resort. We don't much care for night life at all. I'm gathering most of the resorts on Grace Bay are the suite/condo type with kitchens or kitchenettes, which is fine but we really aren't interested in cooking at all and would have hotel-style amenities readily available -- i.e. restaurants. I understand some nice properties don't have a restaurant but have nearby good options -- both walking distance and driving/cab distance. We will rent a car or take cabs -- either is an option. I definitely would like to see the ocean from our room although I don't necessarily need to be steps aways from the sand.

So. . . I'm looking at Amanyara which I gather is totally on a level all its own, and which we may decide is just too pricey.

More reasonably-priced options I'm looking at include the West Bay Club (which I gather has a very nice beach but a less spectacular pool), the Somerset, the Regent Grand, the Regent Palms, the Palms, the Grace Bay Club . . . it's just very difficult to narrow them down. I'd love to hear y'all's thoughts.

And I'm open to any suggestions, not just the ones I've listed . . .
