4 night trip in late Jan for single / adult only - with gorg beach & spa?

I'll be leaving from Charlotte and hoping to do a 4 night trip to the Caribbean for my 30th birthday. I'm going solo, so I would like a more adult only, but not honeymoon exclusive, resort.

My priorities:
Gorgeous beach (like, pristine turquoise water good for swimming!)
Spa w/sauna & steam room
Decent food/or nearby restaurants

I am sorta torn about the all inclusive concept. I'm not necessarily a foodie looking for Michelin stars but I hate low quality, mass produced food. And honestly, I don't really eat or drink enough to make it worthwhile, but I like the convenience of not needing to carry around cash/cards. I'd love to be able to go off resort and check out local restaurants but being a single woman, I realize in some areas that's not a smart option especially after a glass of wine or two.

I've been to Dominican and Mexico so I'd like to try something new. I absolutely loved St. Maarten when we stopped there on a cruise. I've been told Turks is heaven, plus it's not a long flight from CLT. I looked at Club Med Turkoise, seems nice but the price for 4 days was kinda steep ($1800+) , although I'd be willing to spend it if there were good reviews.

Anyone?
