2 weeks in Dominica - Hike and Dive -suggestions?

We're celebrating 10 years of marriage and my 50th birthday this year - so we picked an island that has the best of everything we love - diving and hiking. We're looking at Jungle Bay and Secret Bay for accommodations to split up the trip and see the north west and south east of the island. Is this the best to do? It's a bit pricey once we add it all up so we are looking for suggestions for
- safe and professional dive centers
- spa amenities if we need them - but just a few days in the two weeks spent there - not every day
- great guides for seeing the jungles
- advice on how to get out of the 'cruise ship' area fast
- essentials to pack for Dominica lifestyle
- organic gardens to pick up great veggies/fruits
- one 'don't miss it' item that isn't a tourist center

A few years ago we took a 2 week trip and to West Indies and St. Lucia - it was amazing.
We also hiked in Yosemite in February this year - so we are not afraid of a little rough terrain
Thank you to anyone who can help out

You have enough time to do the Waitukubuli trail from the south to the north of the island if you're interested.

Also, if you want to save money you could consider using airbnb instead of booking hotels.

I found Rodneys Retreat on airbnb. They have an organic garden and a guide if you need one.

I did whale watching with Anchorage Hotel and I can't vouch for how their diving would be but they seem very professional. The hotel was actually really nice too.
