I'd go to weather.com and plug in whistler; then scroll down and click on averages. As for activities...mountain biking, hiking, zipline, ATV tours, fishing, golf, etc. You'll have more than enough to fill a week's time.

Well, I just googled Whistler Village altitude and found out it's relatively low at 653 metres.
I have never in my life heard of someone getting altitude sickness in Whistler. The idea of it kind of has me chuckling, as I regularly go to places with higher elevations like Banff at 1583 metres. It's a rare person who is affected by even that elevation. You will be fine I'm sure.

Altitude sickness isn't a problem below 2400 metres. Now, that doesn't mean you can't feel the altitude a bit below that--some people get a little sluggish or out of breath when exercising or whatnot. But actual altitude sickness (AMS) is an acute malady that you woulnd't get at a low elevation town like Whistler.

There are several Whiski Jack properties, which one exactly? They are all in the village and all are pretty nice. Make sure you get good directions to the check-in location, which is hard to find on your own.
There is plenty to do at Whistler. We like canoeing on the lakes and biking on the trails outside the Village. While it isn't cheap, you can take the gondola up Whistler Mtn, and then the spectacular Peak to Peak gondola over to Blackcomb Mtn. From either, you have some nice hiking in Alpine scenery. If you are an accomplished Mtn biker, you can bike some of the ski trails. I'm not much of a golfer, but I'm told that the courses are good, particularly the one out toward Pemberton.
