Congratulations on your upcoming nuptials! Your itinerary sounds reasonable to me.
While you are in Vancouver, maybe the Grouse Mountain day, try to work in an hour or two for Lynn Canyon. It's free, and has a suspension bridge (Capilano is pricey).
The long drive to Vancouver - it has always taken us a good deal longer than the map indicates. This is because you can get behind a tractor trailor, RV, or other slow moving rig and not be able to pass for many miles. It's also windy, and if you run into rain, you'll need to slow down.
I like your idea of splitting this up into 2 days. That will give you time to stop and enjoy the views, take pictures, etc. There are some roadside park areas where you can take a short hike and stretch out. It is an absolutely gorgeous area.
