There are some fantastic brunches, (not just on Sundays), at the Fairmont Wsaterfront, the Sutton Place and I believe the Wedgewood but they're not cheap. Or if you just want a menu breakfast one of the Vancouver Young crowd's favorite is Sophie's Cosmic Diner in Kitsalano.

In fact there's a whole slew of good breakfast places besides the above and I'm sure you will be able to find a good one close to where you're staying. The Georgia Straight has a list of them under Breakfast/Brunches.

Another interesting and different breakfast place are De Dutch Pannekok Houses which are found in about 5 city locations. The Dutch Wooden Shoe on Cambie and 16th is the same owner but with a slightly larger menu. The specialty is huge Dutch Pannekoks done about 50 different ways but they also have some Indonesion items like Nasi Gorang and lots of egg dishes. They only serve breakfasts and are usually closed by 2 or 3 in the afternoon.
