Many years ago on my last visit to Vancouver, I went with a group on a boat tour up the river (I think it included the obligatory outdoor salmon dinner). The scenery was spectacular. Do such tours (with or without salmon) still exist?

Well, I have not done any of this stuff, but according to Frommer�s, there are harbour cruises from the marina near the entrance to Stanley Park, www.boatcruises.com and Fraser River cruises from New Westminster, www.vancouverpaddlewheeler.com that would seem to fit your description.
I know Vancouver Whale Watch does river tours along the Fraser River Steveston waterfront in which you learn about the history of Steveston and the fishing industry. The ride is 45 minutes. It's not a luxurious cruise, but it's definitely interesting, especially if you're into nature and history:
