Quebec City in January

I am taking my son on a trip to celebrate his college graduation. We have decided on Quebec City. The most optimal time for both of our schedules is during his winter break. I wanted to avoid the prices and crowds of the Christmas and New Year holiday so we are left with the beginning of January. We are flexible on the dates, and I'm unsure of how long to stay and during which part of the week should I schedule. I don't want to plan and have everything closed during one of the days we are there. Also, any other advice about Quebec City would be greatly appreciated!
