Nova Scotia or New Brunswick

Is New Brunswick reachable by car? My wife and I have never been there and were wondering what NB is like. We prefer gorgeous scenery and fewer antique and gift shops and other tourist hustles. Someone mentioned that NB was not "touristy" as in jersey shore touristy-with thousands descending and then leaving on labor day.
Would it be feasible to drive to NB and just get a hotel room? or do reservations have to be made mos in adv.? We were thinking of touring Nova Scotia and New Brunswick by car.
Need help on this. Thanks in advance. Any recommendations on where to stay,and whether or not its a good idea to go during the peak summer season.

This was the wrong week to give up mescaline.
