Niagara/ toronto/wine tastings in 2.5 days?

My husband and I are taking a mini trip to Niagara Falls, ON in May. Due to my work, we cannot stay longer than 2.5 days. We are flying from NC and will land in Buffaloe NY at 11:30am on Thursday, get a rental car, then drive over the border to the Canadian side. Right now I am thinking this schedule could work: get to NF canada at around 2 pm Thursday , Do two or three attractions, check into hotel, then dinner at skylon tower at 8 pm ( we have reservations). Friday morming, wake up early and drive to Toronto for the day or wake up early, do two more niagra attractions, then Drive to Toronto for half a day. Saturday, we plan to drive up to Niagara on the lake for a couple wine tastings and to check it out. Our flight Sunday leaves at 5 am. My questions are 1. Is this too much, will we have enought time for all of this? 2. Should we spend the whole day in Toronto Friday, then see a couple more NF attractions saturday morning before heading to NIagara on the lake, or should we see the attractions fri morning and then head to toronto, leaving all day Saturday for Niagara on the lake? Any advice about what to do in Toronto would be helpful, as well! ( my husband is chinese and would want to goto China Town for lunch or dinner) .
