Big-deal New York chef running three restos in up-market new hotel? Whee, Toronto is saved!
Carpet-bagging chefs have found the kitchen to be hot in Canada. Gordon Ramsey fled Montreal after a six-month involvement in somebody else's place, swearing a blue streak no doubt. Scott Conant brought Scarpetta from New York in 2010 and reportedly likened the critical reception to "being clubbed like a baby seal." But the place is still open. Daniel Boulud, with three stars in New York, shut down in Vancouver after two years -- but he has a place in Montreal now, first-ever French-speaking city for him, and another soon in Toronto.
Me, I prefer to savour ambitious cooks more informally, and by that I mean with menus that don't require me to bow low before paying high. make some positive suggestions, rather than just being negative about david chang setting up shop. also, judging from your post its clear you've never been to his restaurants, because, they are ambitious, delicious and not absurdly expensive.
