Martimes Vacation: flying from Wpg to Halifax (2 weeks)

I am hoping someone can help with my itinerary. I have done some searches, and most seem to be 10-12 days. We are planning to fly from Winnipeg to Halifax and begin a 2 week holiday in early August. We are a family of 4 (2 kids, aged 10 and 13).

We are east coast first-timers. I know a few of the highlights, but nothing in between, so I'm looking for seasoned insight. The first options we are considering:

1. Rent an RV and stay in parks and campgrounds while touring.
2. Rent a car and stay in hotels/B&Bs.

I am wondering if we would miss out on the true experience by not staying in the national/provincial parks?

The next thing to decide is just how much to try to fit into the two weeks. I have a history of packing too much in and wanting to see everything. This has often resulted in too much driving time and not enough time settling/relaxing/truly exploring.

Having said that, is NS, MB, PEI and NFLD possible?

For example:

Halifax along south coastline to Canso
Canso to Sydney
Sydney ferry to Stephenville
Stephenville to Gros Morne
Gros Morne to Twillingate
Twillingate to St. John's
St. John's back to Sydney via Argentia ferry
Sydney to Baddeck (base for Cabot Trail)
Baddeck to PEI (via Pictou ferry)
PEI to Hopewell Rocks (via Confederation bridge)
Hopewell Rocks back to Halifax

Over-ambitious? Other ideas? Must-sees?
