My wife and I are thinking of taking a September or October trip to the Laurentians and possibly Quebec City. We want to see beautiful mountain scenery, eat delicious French Canadian food, be in peaceful areas and see beautiful churches and other architecture. We don't want to spend time in congested areas. We will be driving up from New York.
We would appreciate your suggestions for where to stay, eat, sight see etc.

I haven't been to Quebec city or Laurentians in a few years so don't have specific recommendations for you, but you have certainly picked a good area for the things you enjoy. I've been to Quebec City several times, but not the Laurentians. Quebec City is possibly the most scenic city in North America, but it does get crowded. The old city is basically divided into an upper and lower section. Both are great, the upper having the views, the lower possibly having more interesting markets and restaurants. We usually stay in one of the many b&b's on Rue St. Ursule on the upper city. There are also some chain hotels just outside the city walls. Try and stay in or near the old city.
Since we live in New England ski country, the Laurentians are not high on our visit list, however we have done a lot of exploring in the Quebec countryside between Montreal and Quebec City. Most of it is very rural, flat towards Montreal (great biking trails), more mountainous further east. The area is sprinkled with wineries and cideries. While Quebec City has some very good restaurants, rural Quebec is not known for great dining - lots of poutine, pork pie, pea soup and such. However, French Canada is a wonderful vacation destination, and you will really feel you are in another country. Have you been to the bonjourquebec.com website?
