Help with Trip to Atlantic Canada

My husband and I are flying to Moncton next week to visit our son who is working there. Our intention is to take three days on the weekend (Fri, Sat, Sun) to tour to Cape Breton since our son can only spare one day from work! I know that three days seriously limits us and we don't want to spend our time driving between destinations. After reading the brochures and searching the Internet, this is quick wish list!
Tour the Jost Winery in Malagash. The Hector Festival in Pictou looks interesting. Wouldn't mind a visit to That Dutchman Cheese. What museums in the area shouldn't we miss? Or would it be a better idea to head directly to Cape Breton to the Ceilidh Trail and visit the Judique On the Floor Days Festival and the Red Shoe in Mabou or is the Cabot Trail a better choice and into such places as Englishtown and Baddeck to take for instance the Puffin Tour?

We want to get a flavour of the area but with our limited time can you suggest where we might get the most out of our three days? What shouldn't we miss?

Then my husband and I will be using Monday to Thursday of the next week to sight see in PEI and perhaps the part of Nova Scotia we missed on the weekend. My thought is to take Confederation Highway into PEI, spend a day in Charlottetown, head to the North Shore and then leave PEI from Wood Island ferry. Or vice versa. Which would be your recommendation? We need to return to Moncton at least by Thursday afternoon to fly out Friday.

We enjoy seafood, good wine, music, meeting locals and a good walk/hike!
