Help with 3 week photo trip to Canadian Maritimes plus

My friend and I are planning 2 weeks to visit Nova Scotia, NB, PEI and 1 week for Newfoundland.
We are "older" photographers, so although we love being outdoors, long hikes over rocky terrain is not for us. We really like to photograph sunsets, sunrises, fishing villages, people, (esp, in old time costumes), BIRDS, rocky formations, anything rusty and old, etc. We generally avoid "tourist" attractions and rarely do museums unless the weather is not good outside or the museum is really special.
We will be flying into Halifax on June 21 and hopefully flying to NF on July 6-12 with flight home from Halifax on July 13th. The only HAVE TO date right now is the Stan Rogers Folk Fest on July 2nd in Canso. (Music is the other HAVE TO besides photography)

Our basic plan was to head south from Halifax to Chester on 6/21 (with a photo stop at Peggy's Cove late afternoon
6/22 Mahone Bay & Luneberg, Blue Rocks, and then toward Yarmouth and KEJ (or nearby-we would like to do night photography/stars from near here). (need recommendation where to stay the night?)
6/23 Digby and Digby neck (maybe a whale boat on the Bay of Fundy?)
Annapolis Royal, Grand Pre' National Historic Site
It seems that we will need 2 days for Digby and Annapolis Royal. So close together and so much to do!
6/25 BIG question here...should we head north toward NB.. go around the coast on the 2 or just get on 104 and get to NB? OR..should we take the ferry from Digby to St. John and head up the Fundy coast and stay near Cape Enrage or Hopewell Rocks (2 days) so we can see both the high and low tides of course!
Is watching the tidal bore in Truro worth it? How about the Balmoral Grist Mill?
6/27 we want to visit the northern coast of NB before crossing the bridge to PEI.
6/27-29 in PEI (do we need 3 days or should we cut it to 2?)
(I realize we are missing the Small Halls Music Fest in PEI the week before, but wasn't sure how to do that AND photograph what we wanted in other locations, so we will just catch music where we can besid the folk festival)
We will go west to Cape Egmont and head up to Cedar Dunes and then to North Cape (hopefully for Sunset). Where should be stay? Is this a good plan?
6/28-Tyne Valley (ship building museum?) to Cavendish (not enamored by AGG but figured we should at least stop by) but PEI National Park is supposed to be excellent for night photography. Greenwich Sand Dunes. Should we then stay in Charlottetown? Any place else a MUST see? How much time for this?
6/29- ANOTHER QUESTION HERE- should we head around the coast to get the ferry to Carribou or go thru Charlottetown and stop at Point Prim L.H. on the way to the ferry?
6/29 -7/1 head up to Cape Breton Island. We have a hotel reservation for July 1 and 2 in Port Hastings (this is as close as I could get to Canso for the music fest). Then we will either head back to Cape Breton for another day or 2 or head back toward Halifax before flying to NF on July 6th. Recommendation?
We have an itinerary for NF. (including boat to see puffins and hopefully we will see the icebergs as well)
We will fly back to Halifax on July 12th and then home from Halifax on July 13th.

This is as detailed as we could get right now, but we are open to suggestions and changes. Drive distances and drive times are very misleading since we have a tendency to stop and photograph whenever we see something along the way.
Also, we try to plan our trip to be somewhere to photograph a GREAT SUNSET every night and somewhere we can get up early and maybe catch a sunrise or early morning picture.

Well, whatever recommendations you can provide would be most helpful.
