I am planning to travel to Nova Scotia this August and I am in the process of planning. We plan to take our car to Nova Scotia by the Cat. We would like to tour Nova Scotia, seeing the highlights and the Cabot Trail and possibly visit Prince Edward Island. Is this a possibility or are we over extending ourselves? Thank you,

Are you returning via the CAT or New Brunswick?
A week should be fine but you won't see the entire Province of NS.
Your first day you can drive directly to Halifax (about 4 hours direct) and spend a few days in the city and surrounding areas. It is about a 4 hour drive to Cape Breton and you will need at least 2 days here. PEI is accessible via ferry in Pictou County - about a two hour drive from Cape Breton.
I guess after writing this, yes, you will be spending a lot of time travelling rather than having the opportunity to relax and enjoy either Province. Seven days would take you around Nova Scotia and back to your point of entry - ie Yarmouth - Halifax - Cape Breton - Valley - Yarmouth.
I would skip PEI for this visit or you will be spending too much time travelling.

Living on mainland Nova Scotia, but having grown up in Cape Breton & having visited PEI many times, it is hard to say what you should visit in 7 days. It would involve a lot of driving to visit all. All areas have a lot of beautiful and interesting areas. You could drive to Halifax and spend a few days visiting Halifax & towns like Mahone Bay, Lunenburg, Peggy's Cove, etc. which are about an hour's travel by car from the city. A trip to Cape Breton would take about 4.5 hours but a trip around the Cabot Trail is a must! PEI is beautiful. Perhaps you could visit PEI and New Brunswick at the same time another time. New Brunswick is great as well. Wishing you a nice trip!
