A month in Atlantic Canada

My husband and I are planning on a trip to Atlantic Canada, starting and ending in Halifax at the airport from May 8 through June 4. We were originally intending to rent a car and camp, but it seems that in general, camping isn't available until about the 20th of May. Now I am thinking of targeting 3-4 base points where we could rent a vacation cabin and do day trips and hikes. We are in our 60's and can manage about 12-14km hikes quite easily and also have some kayaking experience (we are from Vancouver Island) and would love to get out on the water if it's possible. We are on a budget and we are more interested in the outdoors, people, food (including beer and wine) and music than we are in museums, shopping, traffic and galleries. Neither of us have ever been to Atlantic Canada, so we are really interested in making the most of this opportunity and would appreciate any and all suggestions.
