14 days self-drive Niagara north

We are Australians visiting Canada for the first time in Sep/Oct 2016. We have 14 days to self-drive north from Niagara Falls. We have to be in Montreal by a specific date and will spend 2 nights and 3 days there before flying back to Vancouver to catch our international flight home. We would like to get as far as Quebec at least, possibly even to Prince Edward Island, but we want to fit in as much as we can in the 14 days. We have no plans or ideas as yet for our 'road trip' and are seeking suggestions as to places that are 'must sees' and things to do on our journey. We are both fit and healthy and there will only be us - no kids! We will have had 3 days in Toronto before Niagara Falls, so we don't need to go there again on our 'road trip'. I'd appreciate suggestions as to places to see, routes to take, places to stay etc.
