I've stayed at the Novotel a couple of times and was happy with it. There are also some self catering apartments which might suit you. You'd probably need to speak with the property managers to discuss any special access requirements for your parents.

The rates may vary from these in August, but unless there's a conference or something else that would inflate them, you may be able to strike a good deal by dealing direct with the property.
I have also stayed at the Novotel - it was fine... not special really but adequate.
Salt apartments looked nice last time we were in the area. They have disabled access apparently.
Rydges have disabled rooms as does the New Chifley which looks really nice too.
