I am planning to go to Fiji in May and looking for intersting things to do. I am very adventurous so I am planning to go diving, rafting and surfing. I am hoping that someone will be able to recommend some unusual activities that i could do, ones that aren't mentioned on the usual travel websites.

jimmyh - try to visit the Yasawa Islands, or one of the lesser visited islands, that are opening their doors to tourists. If on the main island, rent a car from Suva, and get away from the touristy coastal track, and head inland, and visit some of the villages.
You can take a Shotover Jetboat ride from Port Denerau up the Nadi River into the mangrove forest.
You can take a guided hike into Viti Levu's Nasouri Highlands, visiting and staying in small rural villages.
Rent a 4WD vehicle, or go on a guided tour of the Nadarivatu Rainforest, in central Viti Levu.
