I have been to both places and they are both very different. It depends what you are looking for. Bali has an interesting culture and things to see beyond the beach areas such as Ubud and the volcano on another part of the island. It is much less expensive than Tahiti. I found the main hotel area very commercial with loads of package tour travellers from many parts of the world. The quality of your experience will depend very much on where you stay.
Tahiti (again depending on which island you choose) is quieter and much more expensive. The beaches and water are far superior to anything you will find in Bali but culturally Bali probably offers more. If you are looking for sun and sand and a place of rare beauty, Bora Bora is a good bet. Moorea is also popular but not as scenic as Bora Bora. It is worth cruising the area in a smaller sailing vessel if you can- that way you can access some of the smaller islands.
If I had to choose between the two places I would likely choose Tahiti over Bali. I found it more peaceful and the water is simply the best. The cost difference is significant however. Again, your choice will depend on the type of holiday you want.

I can see I'll have to put Tahiti on my list of "Places to see before I die"!
Just to add to your confusion - the best place I have been to, for a similar experience, is Mauritius. Hard to pinpoint why - beaches, people, atmosphere, cocktails...
It is very expensive compared to Bali though.

Get ready for a loooong trip. We went to Bali just this past May and this is how it breaks down.
LA to Taipei...... 13 1/2 hours
Taipei to Singapore 4 hours
Singapore to Bali 2 1/2 hours
\These are the actual flying times. Believe you me, now I actually KNOW what "jet lag" feels like.
