New Zealand Itinerary - Looking for suggestions on 12-13 days on the Ground

Having researched this briefly, we are planning a trip for next February. We have about 2 weeks plus maybe a couple of extra days and we know that at least 3 days will be consumed by travel back and forth. So maybe a 12-13 day itinerary on the ground would work. We enjoy great scenery on short (2 to 4 hours max) hikes, good food and wine, history, culture and for my wife, upscale shopping. If there is a choice between bungee jumping and visiting a botanical garden, we would choose the latter. It does not matter if we are based in cities or "out there", but we really only want to be at a maximum of 4 destinations during our stay so that we can "settle in" and get to know each destination. Also, it is not necessary to cover both islands, but we will likely arrive in Auckland as most flights do, but are open to continuing on, if that is the best approach.
