Itinerary help needed - slight disability

I walk with the aid of two canes and leg braces but I do get around. I get scared off with words like "slick" and "icy" and "slippery". Other than stupidly steep climbing, I'm okay and get around even if a step slower than some others.

So here is our proposed itinerary for March of 2014. We are cruising New Zealand from Sydney, so this roughly 10 night Australia tour must end there.

Flying into Cairnes from the US. 3 nights - Great Barrier Reef, Daintree 4WD tour
Flying into Adelaide - 3 nights - Kangaroo Island, Wine tour w/ sightseeing
Flying into Sydney - 4 nights - Manley Beach & Harbor Cruise, Blue Mountains, Opera House & Sydney city tour.

Do all of the above meet the test of being abnormally slick?
Although I'm failing to see Ayers Rock are we getting a full enough "feel" for Australia?
Too many days in one spot? Too few?
