Wendy, do you have an idea what your expected price range, or service/facilities will be. Good hotels are aboundant and many are cutting their prices at the moment in order to attract business.
I just came back from a 2 week trip to Asia
and our last stop was Hong Kong. The hotel we stayed at was elegant, clean, on Victoria Bay and was on the Kowloon side. It was The New World
Hotel, have a great time.
I just had a good experience at the Marco Polo Hotel. Travelogue at:

The Regent's the best and it's really cheap at the moment due to lack of business. Fantastic luxury at the price you will be paying.
The YMCA at Salisbury Road, right next to the Peninsula Hotel is excellent value. For the price of a normal hotel room in other 4-5 star hotels you can get a huge 2 room corner suite and stunning harbour views.
